Pancho's, Cabo San Lucas

One of the first places we head for when we arrive in Cabo is Pancho's. Whether it's breakfast, lunch, or dinner, this favorite of ours is always special.

The food is delicious and reasonably priced. The chefs are grilling food over the open mesquite fire in the middle of the restaurant, and the bar has everything you could want, specializing in tequila.

Pancho's is owned by John and Mary Bragg, formerly of Thousand Oaks, California. Over the years, John has built up the world's largest collection of tequila labels, with over 500 on hand.

Mary has decorated the place in bright cheery colors, with papel picado decorations hanging from the ceiling. Named for the famous Pancho Villa, the walls are adorned with old photos and other memorabilia of his times.

On one of our many visits there, we celebrated a birthday of one of our grandsons. The staff and mariachis entertained us, and outfitted the kids with paper hats and treats to eat and drink.

For our website, Pancho's graciously offered their recipe for Pancho's Margaritas:

    2 ounces Controy
    4 ounces tequila
    3 ounces natural syrup (or to taste)
    3 1/2 ounces fresh lime juice (or to taste)
    lots of ice

For mixed margaritas, put all the ingredients in a blender, mix, and serve. For margaritas on the rocks, stir the ingredients together in a large pitcher and serve over ice. The lime juice and natural syrup can be varied depending on how sweet or sour you like your margaritas. This recipe serves six.

Bartenders generally use a natural syrup instead of sugar, which doesn't always dissolve easily. You can use light Karo syrup, or make your own by dissolving sugar in water.

Pancho's is an experience not to be missed, and is certainly one of the most popular restaurants in Cabo.

Pancho's is open from 7 am to 11 pm. It's a good idea to get reservations for the peak hours. Call 143-0973. It's located at Hidalgo and Zapata, near Blvd. Marina.

Incidentally, during a recent visit to Pancho's, I met a lady who was purchasing cook books from Pancho's gift store and giving them to her lunch guests. She turned out to be Anne O'Brien, who is also an author, having written "Traveling Indian Arizona". After returning home to San Diego, I ordered her book from Amazon, and enjoyed it a great deal. In fact we will make use of it during an upcoming motor trip to Northern Arizona and Southern Utah with the kids and grandkids later this summer.

The book Anne was giving to her friends is a book I also have, called "Cooking with Baja Magic", by Ann Hazard. I also recommend her book, and the subsequent book "Cooking with Baja Magic Dos". Both books include the famous Tortilla Soup recipe from Pancho's!
