Esperanza

Esperanza is a beautiful exclusive resort about seven kilometers east of Cabo San Lucas, along the Corridor on the way to San Jose del Cabo. At the gate, tell the guards that you want to shop and have lunch (or dinner) and they will let you in.

We always make this our last stop out of town on the way back to the airport, because the scenery and food are just spectacular. We prefer to eat out of doors at the tables overlooking the pool and sea.

Although I don't have official recipes for this restaurant, we took photos and have a pretty good idea regarding the ingredients. If you want to experiment with these, I'm sure you'll be pleased with the results.

But in any case, try to eat here next time you're in Cabo!

For starters, we had delicious fresh rolls with two kinds of olive oil; one with chiles and garlic and one with just garlic. Both were delicious. And both of us preferred the oil with the chile flavoring.

Coleen had their Pecan Chicken Salad with Agave Honey Vinaigrette. Of course agave honey is from bees that have their hives placed in the agave groves, and you may not be able to duplicate that. So you'll probably have to make do with the honey you have. In any case, use the honey to sweeten a vinaigrette you make from vinegar and olive oil.

The chicken was lightly breaded and fried, with a delicious coating. It was served with tomato, avocado, and bits of pecan. On the side was served a pecan pate with chopped pecans on top. The salad was garnished with slender tortilla strips.

I had their Shrimp Salad Wrap with Lemon-Chipotle Dressing. This came served with a delicious home made catsup to go with their outstanding French fries and a small green salad.

The shrimp wrap contained shrimp, shredded lettuce and carrot, mayonnaise, and chipotle and lemon flavorings. Very delicious, and worth experimenting with. When all the ingredients are good, it's hard to go wrong. Might not be a good as the original, but it doesn't hurt to give it a shot.

To get there, get off the highway at the Pemex station across from CostCo, and drive east down the frontage road. Watch for the signs.
