Double Eagle, Cabo San Lucas Country Club

We spend at least one week a year at a timeshare condo at the Cabo San Lucas Country Club. The restaurant there caters mostly to the residents, but welcomes others who wish to visit. The golf is great, and the food is some of the best in Los Cabos.

They have two restaurants: Bogie's, which is indoors, and Double Eagle, which is outdoors, as you can see in the photo on the right. Both are excellent, with the Double Eagle the more casual of the two.

We had lots of good food there, but one of the most delicious, and with a great presentation to boot, was the Avocado Shrimp Salad.

Here's how you can make the Avocado Shrimp Salad at home:

    1 ripe avocado, preferably Hass
    1/4 pound medium shelled, deveined, and cooked shrimp
    3 tablespoons chopped white or yellow onion
    3 tablespoons chopped red onion
    3 tablespoons mayonnaise
    1/4 teaspoon Tabasco
    4 or 5 lettuce leaves
    1/2 tomato, sliced
    4 or 5 sliced red onion rings
    grated cheddar cheese

Make a bed of lettuce on the plate. Cut the avocado in half lengthwise, twist the halves apart, and whack the knife into the seed and twist it out. Spoon out the contents of the avocado in large pieces and lay them on the lettuce.

Put the large ends of the empty avocado shells under the edge of the avocado, as shown in the photo.

Mix the shrimp, chopped onion, mayonnaise, and Tabasco together and fill the lower halves of the avocado shells.

Place the sliced tomato, onion rings, and grated cheese over the shrimp salad and serve, as shown in the photo.

We had this lunch poolside, with some of the best iced tea we've had. It could be that the limes used instead of lemons is part of the difference. (Click on the small photos to see larger versions.)

Double Eagle gives you several choices when you order shrimp, and they are all delicious. To show you the options, I took a photo of part of their menu, shown on the left.

After a morning of golf, we came back here to have one of the best lunches yet. We shared Bogie's grilled chicken Nachos, and then had one of the best bacon cheeseburgers in Cabo.

All in all, the food is great, the pool inviting, and the golf challenging. The course is beautiful, with views of Land's End and the Sea of Cortez.

To get to the Double Eagle and the Cabo San Lucas Country Club, drive east from Cabo San Lucas toward San Jose del Cabo. As soon as you leave the traffic light next to the bull ring, get off onto the frontage road on the right as soon as you get a chance. You'll see the Country Club entrance on your left, which you won't be able to get to until you pass it, go under the bridge, make a U-turn on the frontage road going the other way, and turn right into the entrance. It seem difficult, but you'll know what to do when you're there.
